Crab Salad Pitas

This is my recipe for a lower-calorie crab salad. It made a very good dinner last night :happy:

Crab Salad Pitas
Makes 4 sandwiches

Ingredients:
1 cup plain sugar-free yogurt
1 lb lump crab meat, fully cooked
1 scallion, finely chopped
4 tbsp light mayonnaise or soy mayonnaise
1 stalk of celery with leaves, finely chopped
2 pita pockets
1 1/2 tsp Old Bay seasoning (a mixture of celery salt, black pepper, and paprika)
¼ cup chopped parsley, finely chopped
2 tbsp brown mustard

Cook:
- In a medium sized mixing bowl, combine mayonnaise, scallion, celery, mustard, and yogurt.
- Gently fold in crab meat, and stir until thoroughly covered. Mix in Old Bay seasoning and parsley. Set aside.
- Slice both pitas in half, creating four pita pockets. Fill each pocket with ¼ of the prepared crab salad. Garnish with parsley and serve cold for a refreshing lunch.
