Clean Vegetable-Tortellini Soup 300 cal for a HUGE bowl
My Homemade Veggie-Tortellini Soup
Makes six GIANT servings (many more if you don't like to eat as much soup at once as I do)
Nutritional info per serving (made exactly as directed):
Calories: 303; Carbs: 46 g; Fat: 8 g; Protein: 16 g; Fiber: 11 g; Sugars: 11 g
Ingredients:
1 tbsp olive oil (or another high-heat safe oil, or butter)
1 medium white onion, diced
2 ribs celery, diced
4 cloves fresh garlic, pressed or minced
1 tsp dried parsley
1 tsp dried thyme
½ tsp dried rosemary
½ tsp dried basil
6 cups reduced-sodium vegetable broth (use chicken broth if you prefer it)
2 small heads broccoli, chopped large
1 container white mushrooms, sliced large
1 medium zucchini, chopped large
2 whole carrots (unpeeled), chopped medium-large
½ large bunch of curly kale, chopped into bite-sized pieces (about 2 cups chopped)
1 large can (29 oz) diced tomatoes in juice
1 cup frozen edamame (or a can of any bean you prefer)
1 package whole wheat tortellini (or use any pasta you prefer, or a grain like brown rice, millet, or quinoa)
Salt and pepper to taste
Directions:
1) Sautee diced onion and celery with olive oil in a large soup pot over medium heat until they begin to soften, about 5-7 minutes.
2) Add all dried herbs (fresh would probably be better!) and garlic and stir constantly for 60 seconds.
3) Add vegetable stock to pot along with chopped broccoli, mushrooms, zucchini, and carrots, and stir to combine. Bring to a boil, then reduce heat to a simmer. Let soup simmer 20-30 minutes (depending how done you like your veggies and how long you can wait!).
4) Add the large can of diced tomatoes WITH THE JUICE, along with chopped kale, frozen edamame, and tortellini and stir well to combine. Cook over medium heat until edamame and tortellini are cooked, season with as much salt and freshly ground pepper as you like, serve and enjoy!
