Delicious, easy and ready in less than 30 min!!

Okay, found a good one this week so I had to share-

take a chicken breast, dip in egg substitute and then lightly coat in whole wheat breadcrumbs and season with salt and pepper. Spray lightly with butter flavored cooking spray, and bake in 350 degree oven until done. I like to broil the last few min to toast the bread crumb coating.

Meanwhile, drain a jar of water packed roasted red peppers. Puree the peppers with 1-2 cloves of garlic and a tsp of italian seasoning.

Plate the chicken over a bed of steamed spinach (I just did the microwave in bag!), then drizzle with the sauce. Crumble a tiny bit of low fat feta and shredded fresh basil on top and enjoy! It was fantastic and SO easy and light!

I haven't calculated the calories on this yet, but the spinach and sauce have virtually nothing, so you just need to go easy on the breadcrumbs and feta and enjoy!
