yeah mfp gives you a certain quota of carbs and protein and when you go negative its means you've exceeded that quota, i actually tend to ignore my protein quota because i like to have a lot more than mfp gives me.

Those are your macronutrients (carbs, protein and fat). They each represent a percentage of the calories you eat.

For example, if your macros were set up at 40% carbs, 30% fats and 30% protein and you were on a 2,000 calorie diet...

carbs are 4 calories per gram, so on a 2k diet, it would give you about 800 calories in carbs and list 200g as your goal
fat is 9 calories per gram, so your goal would be 600 calories in fat and about 67g as your goal
protein is also 4 calories per gram so on a 2k diet, it would give you anoter 600 calories for carbs and would list 150g as your goal

If you go over your goal, for example, you ate 250g of carbs, it would show the -50.

Also, many may argue that if you are just starting out, it is wise to focus on the big picture (calories in<calories out) as to not overwhelm you and after you become accustomed to changing your diet, then you can work on reaching your macro goals.

MFP sets protein very low, imo.

You can manually set your macros to different percentages to better fit your goals and lifestyle.

And on a final note, it is barely past noon and I'm getting sick so if that didn't make an ounce of sense, I apologize.
