rice noodle, cucumber, carrots, shrimp (cooked but cooled). just lay down the noodles length wise, and make sure you cut the carrot and cucumber long ways. then just lay all the stuff down like a burrito and wrap it all up.
you can dip it in a lil sweet chili sauce too. sooo yum. only 15 calories a tbsp0 -
How do I wet the paper to make it bendable? That sounds weird, but it's kind of stiff right now, haha0

This recipe looks good and mentions soaking the rice paper. http://www.epicurious.com/recipes/food/views/Vegetable-Summer-Rolls-1050120

You don't have to soak them. Just dip in a bowl of warm water, and then let it sit on your cutting board for a few seconds before rolling.
It takes some practice, but even if they don't look pretty, they taste amazing. I like to make them with shrimp, basil, rice noodles, and a spicy peanut dipping sauce. Vietnamese style spring rolls....nom nom nom0 -
Yeah don't soak them, they will get too soft and sticky, making it really hard to roll. Just a quick dip will do.0

Dip in warm water for 5 seconds, and put them in the fridge for a bit before cutting them so they stay together better.
