favorite ways to bring the flavor, leave the calories?

I'm pretty new hear and just looking for some new ways to do as title says: bring the flavor, leave the calories!
What are your favorite tricks to do just that? Here are a few of mine:
capers (ZERO calories, but a little salty and a little vinegary...mmm)
pickled onions (I thinly slice then put in a jar with half water, half white vinegar, enough to cover. generous salt and just a teaspoon or two of sugar to mellow the vinegar. You don't drink the juice (or I don't anyway) so I don't think the sugar is a big deal...plus it makes a lot of pickled onions). I put them on salads, sandwiches, mexican things like tacos/tostadas.
Lemon zest/juice
So whatcha got? :-)
