Mushroom Bisque

Options
I am looking for a good low carb mushroom bisque recipe, or another creamy low carb mushroom soup recipe, or even some other way to use the mushrooms in my fridge in a creamy, low carb way!!! I've googled and have looked around quite a bit and haven't been able to find one. Does anyone have any good ideas? It'd be greatly appreciated, thank you!

    Bump.

I want to know the answer myself. I have a bunch of portabellas hanging in the fridge and I haven't any idea what to do with them.

    Hello
I make quite a healthy mushroom soup.

chop the mushrooms and 1 onion and fry slightly in a pan.
once soft, top up the pan with veg stock/ water.
leave to simmer until all the onion and mushrooms are soft.
blitz with hand blender, add in pepper, and low fat creme fraiche or natural yoghurt.,

blending the mushrooms rather than leaving them chopped makes a more ceramy / gloopy texture.

I usually make homemade mushroom soup very similar to the first recipe - except I don't add onions but I do add a clove of crushed garlic and some parsley...and I'll use double cream or full fat creme fraiche :-))
