YUMMY AND FULL OF PROTEIN!

I only recently had my first experience with garbanzo beans. I can't find the original post, but someone suggested sautee'ing them and then roasting them at 250 for a total of about an hour, turning every 25 minutes. I LOVE THEM! Until today, my favorite seasoning on them was garlic salt, but today I felt like Chinese food, looked for the soy sauce, was out of it, and used teryaki instead. They are super delicious.

I stuffed myself at lunch today also with only 160 calories. I cut up a bunch of baby carrots, threw them in with about 8T of chunky salsa, mixed it up, and ate it with a spoon! It was awesome. I found the idea on a post where someone was looking for something to put with salsa. I can't find that thread either, but thanks for asking the question, wherever you are!

    Oh my goodness, I never thought of cooking them! I've only ever eaten them in salad, but I LOVE them! Ohh I'm totally trying this. :tongue:

    I found it!!!! If you make them gooey, and eat them hot, the texture inside is like a McDonald's french fry. If you make them crispy they are more like a chip texture or like the small fries that get crispy! Enjoy! Let me know how you like them!

    Roasted Garbanzo Beans (Chickpeas)
    2 15 oz. cans garbanzo beans, drained and rinsed well

    **This is a great snack when I'm craving something like chips or french fries.

    1 Tbsp. cayenne pepper
    2 Tbsp. olive oil
    sea salt or kosher salt to taste
    Preheat oven to 375 degrees. Toss chick peas with cayenne pepper and olive oil. Spread out in a single layer on a nonstick jelly roll pan. Place on the center rack of the oven and roast 40-50 minutes, stirring every 15 minutes or so.

    The chickpeas are done when they are browned and taste crispy. If they're still soft in the center, continue roasting in 5-minute increments until done. Sprinkle with sea salt and serve immediately.
    Serves 6-8.
    Per serving (based on 6): 208 calories, 6 g fat (1 g saturated), 0 mg cholesterol, 32 g carbohydrate, 6 g fiber, 7 g protein, 3% Vitamin A, 9% Vitamin C, 5% calcium, 11% iron
