Sweet Potato Quesadillas

That post about yam fries reminded me of this delicious recipe.
Yam/Sweet Potato Quesadillas
Vegetarian (dairy)
Serves 4
Ingredients:
1 onion, finely chopped
1 cloves of garlic, minced
1 tbsp olive oil
2 cups sweet potatoes or yams, peeled and grated
pinch dried oregano
1/2 tsp chili powder
1 tsp ground cumin
pinch of cayenne pepper
salt and black pepper to taste
1/2 cup cheddar cheese, grated
4 tortillas (8" or 10")
On the side:
fresh salsa
sour cream
Cook:
- Saute the onions and garlic in the vegetable oil until the onions are translucent.
- Add the grated sweet potatoes, oregano, chili powder, cumin, and cayenne. Cook, covered, for about 10 minutes, stir frequently to prevent sticking.
- When the sweet potato is tender, add salt and pepper to taste and remove the filling from the heat.
- Lightly oil a heavy skillet, and warm the skillet over medium heat.
- Spread 1/4th of the filling and 1/4th of the cheese on half of each tortilla. Fold the plain half of the tortilla over the filling, and place the quesadillas in the heated skillet.
- Cook each side for 2-3 min. The cheese should be melted and the tortilla, lightly toasted.
This recipe is adapted from a recipe found in "Moosewood Restaurant Cooks at Home"...just made more diet friendly.
