Chicken and root veg soup

I am pretty chuffed at how well this one turned out so thought I would share.

I made a big pot of chicken stock from the carcasses - you could use the equivalent of chicken stock cubes.

Chicken stock (or stock cubes and water)
1 swede
3 carrots
4 Parsnips
2 onions
3 garlic cloves
Salt & pepper to taste
ground nutmeg

I just peeled, chopped and chucked it all in to boil (about 20 minutes at a rolling boil) and blitzed with a stick blender. Its a nice comforting winter type soup.

Serves 6.

158 cals
31g carbs
2g fat
6g protein
197 units sodium
6 units calcium
