Low Fat Thai Chicken Salad
Starting this new year off right, I made the consious decision to start shopping more at Trader Joe's. Eventho, sunday was the worst day I picked to go, 200$ later I came home with some wonderful items and proceeded to make my lunch for work the next day.
Here's what I came up with:
Chicken Breast - 4oz
Trader Joe's Yogurt & Chive dip - 1 tsp
Trader Joe's Thai Yellow Curry Sauce - 1 1/2 tsp
Trader Joe's Creamy Goat Cheese - 1/2 tsp
Sirrcha Hot Sauce - (Depending on how spicy you like) I only added about 4 drops (haha)
Baked Chicken @ 350 degrees for about 20 min or until done. Season the chicken with some olive oil, chopped garlic and S&P. When chicken is done let it cool for a bit and then cut into cubes. Combine the rest of the ingrediants and let sit in frig overnight.
Total Calories =171
I added this to some Trader Joe's mixed greens, green onions and tomatos. Try it in a whole wheat tortilla as a wrap or on some whole grain bread as a sandwich!
