Today is National Apricot Day so what better way to celebrate then with a low calorie (233) Apricot Chicken Recipe! Easy and delicious!

Non-Food Items
(makes 2 servings)

Measuring Spoons
2 Small Microwave Friendly Bowls
Meat Mallet/Heavy Can (anything to pound chicken with)
Baking Sheet
Aluminum Foil

Food Items

1/2 tablespoon Can't Believe It's Not Butter! Light
1 tablespoon Apple Cider Vinegar
1/2 tablespoon cornstarch
1/4 cup sugar-free apricot preserves (like the kind by Smucker's)
1/2 tablespoon dry onion soup mix
2 6-ounce raw boneless skinless lean chicken breasts

** optional salt and black pepper **

    Yumm- I want to try it! IDK if there are sugar free apricot preserves here though. But probably there is something.
