    I sautee (spray pam and 1 tbls of EVO) onions, celery, mushrooms, shredded carrots and jalapeno peppers. for the kiddo skip the peppers.....

    Oven-roasted sweet potato - sprinkle a bit of salt/pepper, and drizzle just a bit of melted butter and honey. Or mash cooked sweet potato with cinnamon and a very small amount of honey, then sprinkle some crushed pecans on top.
    better tp cit sweet potatoes in wedges and spray w/pam then sprinkle with seasoned salt. bake for 30 minutes in 350 oven. Kids love fries:flowerforyou:

    Toddler friendly.... is there any reason why he cant try new foods when you prepare them?

    Consider trying chicken dishes from around the globe... try japanese one night, chinese the next, greek one night, italian the next...

    Anything goes with chicken but to explore other countries could mean good parent-child time, both in the kitchen and at the table...learning about 'what other people in other countries like to eat with chicken'
