Easy Eggplant Parmesan

Thought I'd share what I made for dinner because it was super easy and super delicious!

Ingrediants:
2 cups cooked spaghetti pasta (about 1 cup uncooked)
1 small eggplant or 1/2 large eggplant
3/4 cup pasta sauce
1/4 cup shredded or grated parmesan cheese
1/3 cup water

Directions:
Cut eggplant into bite-sized cubes (you want about 2 cups total). In a saucepan, bring water to a boil. Add eggplant. Cover and cook 5-10 minutes or until eggplant is soft. Add pasta sauce, heat for an additional minute. Add in parmesan cheese and stir until everything is well combined. Serve over cooked spaghetti. Makes three servings.

    This sounds reallyyy good. Too bad I gave up pasta. I may use half the recipe and morph it into something else. I've never had eggplant though, sounds good.

    The original recipe recommended that you could serve it on a bun as a sandwich instead of pasta. I'm sure that would taste great too!

    I'm not doing pasta either but I'm thinking spaghetti squash!! Thanks for the idea!
