I need some ideas for breakfast, recipes that can be made in advance, that are low calorie and high protein. Anyone have any they'd like to share? :smile:

    Last week I made mini egg casseroles. I used 4 eggs, lots of veggies (baby spinach, mushrooms, green & red peppers, onions, tomatoes), dash of hot sauce, sprinkle of feta cheese crumbles. Mixed it all together and baked in muffin pan (made 6 "muffins"). Came out around 80 calories, 5 gm protein per muffin. I put the leftovers in ziplocks and just reheated one every day. Delicious & filling!
  • Ingredients:
    • 1 ripe banana
    • designer whey protein powder (vanilla)
    • 1/2 cup baby spinach
    • 1/4-1/2 cup water
    • 1 cup ice

    Preparation:
    Blend until desired consistency.

    Nutrition:
    Calories 205, fat 2 (saturated fat 1), cholesterol 60, sodium 98, potassium 550, carbs 34, fiber 4, sugar 21, protein 20.

    I sometimes will make egg muffins in cupcake tin. I'll have to look up the recipe but it's basically eggs/veggies and maybe hashbrowns in a cupcake tin. Bake then freeze. Reheat as needed.

    I have a protein smoothie consisting of:

    + 1 scoop whey protein (any flavour you wish but I find banana or strawberry the nicest tasting)
    + 80g blueberries
    + 1 banana
    + 1 kiwi
    + 2 tsp Baobab fruit powder (optional - I add it for extra nutrients)
    + 50g Bio live yoghurt
    + 1 tsp lemon zest (or however much you want)
    + 1 tsp vanilla paste (great ingredient, a much cheaper way of adding real vanilla to any recipe)

    You can make the base blend in advance and just add the whey protein in the morning and give it a good mix/blend/shake.
