I have done the south beach diet A LOT. It definitely works. I was on it a couple years ago and lost and kept 30 lbs off for a couple years. Problem I began having was if I had a cheat meal or went to a party and drank and snacked the next morning I'd weigh 4lbs more! From just one night of a bad meal. then I'd switch back to first phase to drop the weight and after a while of switching it just didn't work anymore. No amount of first phasing would get the weight off. Not sure if my body was just too used to it or what but it was discouraging. You can eat until you are full of the right things so that made it nice but if you mess up the carb ratio you will gain it back. I am finding this time around calorie counting is easier for me. I had pizza the other night and it didn't mess up my progress....if I had pizza on SB I'd gain 2 lbs. It's just about preference really. If you feel you can stick to it FOREVER then it is fantastic. There are a lot of recipes out there that are good. You lose weight fast...but if you aren't careful you gain it back even faster. Good luch with whatever you chose!

What you're describing are fluctuations in glycogen and water due to an increse in carbohydrate after being low on carbs

Personally, I'm not in favor of diets, especially ones that are part of fads or that advocate extremes. The first 2 stages of South Beach fall under that category for me. The 3rd stage, though, the one he advocates adopting for life, is not low carb at all. It simply entails avoiding junky carbs (like white rice) and instead choosing whole grains (eg quinoa, brown rice) and lots of veggies for the source of carbs. I bet many of us who eat clean are accidentally South Beach-ing it. It's an unfortunate name, because it's just sensible eating (at stage 3 anyway!).
