How to boost my calories

I met with a nutritionist who put me on a plan of eating 1500 net calories per day, heavy on protein and veggies, low on carbs (based on my body composition and the fact that I'm gluten intolerant).
However, I'm struggling to hit that mark! Most days I end up about 1300-1400 calories; on days where I exercise this really puts my net calories in a deficit.
I'm getting my recommended servings of protein, dairy, legumes and fruit... any additional calories would really need to come from veggies. The other problem I encounter is just not being hungry enough to eat all that, although I know I'm not eating enough and that is why I've had issues losing weight.
Any suggestions?
