extra calories/ small meals/ water/ excercise

1) Im a stay at home mom so timing isnt really a problem so I eat about every 4 hours. My diner is huge but I dont actually cook it so I never really have much choice and sometimes its hard to figure out the calories in the food. I try to stop when I'm full though but my main problem is I get up at like 9-ish and finally go to bed at like 1 or 2 I eat breakfast lunch 3 or 4 hours apart but depending on when i get up is how close I am to dinner which is usally 5-6 but after dinner im hungry again so I eat again at like 10 and am some times humgry after that.
2) The second question I have is I read a forum that said hey have calories left over and I try and have calories left over. Is that bad it changes from day to day some times about 400 or sometimes I'm verry close like wih in 50. My calorie goal is only 1,440 I always eat at least 1200.
3) Water I drink this drink mix thats only 5 calories in an 8 oz glass so that counts as my water right.
4) Exersice I dont always have the opertunity. I would like to go for walks but the neiborghood isn't the greatest for that. and Iv'e tried to do a palates routine i found on Youtube but I caculated the exercises seperately and it didnt give me any calories back. In a related note having a four month old also caused an exercise problem. I never know how long she'll sleep and i usally take that opertunity to do things like dishes or computer time. Amy segestions of things I can to with my daughter?
