Are you craving rich and creamy?

Try to make slow scrambled eggs. They take a little while, but the results are amazing. It tastes like you are eating butter and cream. In a good way of course.

Basically. Start by beating your eggs as usual. Season as usual. Take your nonstick pan. Turn the heat down really low. I use about 2 or 2.5 on my electric stove. Add a bit of oil (maybe a teaspoon for 2 eggs or so -- I use butter or earth balance here).

Then you wait. Stir constantly. It will slowly thicken. Sometimes I add some freshly grated cheese: romano or parmesan or aged gouda. 10-25 minutes later they are done. Thick and creamy, like pudding. Check you seasoning and serve as usual.

    I've been obsessed with scrambled eggs for a quick breakfast before work but have been doing it the cheaters way in the microwave - not as good!

    Must try this when i've got some extra time on my hands!
