Eating on REALLY high calorie burn days? 3000+

Hi there I am doing a hybrid of P90x and INsanity. I workout 6 days a week and I hike with a 25lb pack 3-4 days a week. I dont hike for the workout or extra burn, I just enjoy nature...its a de-stresser for me. That being said, I have days that I burn 1000 calories doing Insanity, and burn an extra 1200 calories hiking....so thats a 2400 calorie burn! My BMR is 2100 and I need to lose 20-25lbs. Im eating around 2000-2200 per day but dont know how to eat on these really high burn days?? Do I eat more? Do I stay the same and zig zag my deficits?? I just dont want my metabolism to freak out if Im having days with 2000 calorie deficits. Although Id love to lose the weight!
