Got this recipe from Allrecipes.com and tried it the other day.....Absolutely Wonderful!

PREP TIME 10 Min
COOK TIME 55 Min
READY IN 1 Hr 5 Min
Original recipe yield 1 - 8x4 inch loaf

12 Servings

INGREDIENTS
1 1/2 cups all-purpose flour
3/4 cup white sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon (I add more cinnamon, another 1/2 t.)
2 egg whites
1 cup banana, mashed (2 medium bananas)
1/4 cup applesauce (no-sugar)

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

    I made this tonight because I had bananas that needed to be used up, not only did I love it but my husband and a friend ate almost the whole batch--That is awesome for low fat, no fat food--In fact I couldn't even tell it was different I almost think it was better than my usual banana bread. I wonder if you could use splenda and make it low calorie too? Thanks for the great recipe

  • Nice recipe. I will try it. I would replace the white flour by whole wheat and the white sugar by unpacked brown sugar.:wink:
