Rainbow Gelatin Cubes

Ingredients:
4 packages (3 ounces each) assorted flavored gelatin
6 envelopes unflavored gelatin, divided
5-3/4 cups boiling water, divided
1 can (14 ounces) sweetened condensed milk
1/4 cup cold water
Directions:
In a bowl, combine one package flavored gelatin and one envelope unflavored gelatin. Stir in 1 cup boiling water until dissolved. Pour into a 13-in. x 9-in. dish coated with cooking spray; refrigerate until set but not firm, about 20 minutes.
In a bowl, combine the condensed milk and 1 cup boiling water. In another bowl, sprinkle two envelopes unflavored gelatin over cold water; let stand for 1 minute. Stir in 3/4 cup boiling water. Add to the milk mixture. Spoon 1 cup of the creamy gelatin mixture over the first flavored gelatin layer. Refrigerate until set but not firm, about 25 minutes.
Repeat from beginning of recipe twice alternating flavored gelatin with creamy gelatin layers. Chill each layer until set but not firm before spooning next layer on top. Make final flavored gelatin; spoon over top. Refrigerate for at least 1 hour after completing last layer before cutting into 1-in. squares.
Yield: about 9 dozen.
One serving: (two cubes, prepared with sugar-free gelatin and fat-free sweetened condensed milk) Calories: 26 Fat: 0 g Saturated Fat: 0 g Cholesterol: 0 mg Sodium: 27 mg Carbohydrate: 4 g Fiber: 0 g Protein: 2 g
***When I do this dessert it takes me FOREVER... because you want to make sure the layers are set enough of they will mix. It looks AWESOME though, almost tempts me to eat Jello!

My brother LOVES this dessert... I think it's the layering...cause he won't eat it any other way.
I've also done versions with sour cream and yogurt in place of the sweetened condensed milk.0 -

I hate Jello.
I think it's the jiggle.
But my daughter LOVES Jello.
Maybe I can make this for her, and because I love rainbow colorings, hee hee.
I could even send it to preschool and be THE mom, you know? :laugh:0 -
It's a fun dessert/salad (depending on who you ask).
I have done red and green for Christmas, red and blue for the 4th of July....
It's just sooo versitile.
I've also done it in a bundt pan (regular and artsy) and they look AMAZING!0
