Ricotta Stuffed Turkey Meatballs

1 pkg of Ground Turkey preferably 97/3 fat free or 99% fat free

1 cup unsalted Swanson's cooking stock

4 tsp Italian Seasoning

Small Container of Ricotta cheese

1 egg white

1 tbsp parmesan cheese

Directions -

1. Preheat oven to 425 degrees.

2. In mixing bowl put in turkey, egg white, italian seasoning, parmesan, and half a cup of the chicken stock and mix til blended.

3. Scoop out meat with ice cream scoop and stuff ball with the ricotta cheese. Repeat until there is no more meat.

4. Place meat balls in 13x9x2 baking pan (lined with heavy duty foil and sprayed with non stick spray), Pour in rest of chicken stock and cover with regular foil.

5. Place balls in preheated oven for 30 mins, turning balls half way through.

Serve meatball with rice or pasta. Or just eat by themselves with vegetables. You can stop with turkey gravy plain or with marinara sauce.... the possibilities are endless.

    Ok, so I finally tried the meatballs.... and they are as good if not better than I hoped they'd be. The chicken broth in the bottom of the pan while cooking in the oven helped keep the meat moist and added that last bit of flavor. I will add a pic the next time I cook it.
