Large Healthy Cookbook??

Hello All!
Does anyone know of a good sized healthy cookbook??
My hubby will be doing a 15 month job out of town soon and I'm going with him, and will just be working a few hours a week online so I'm going to have a ridiculous amount of time on my hands. I just re-watched Julie & Julia and I think it would be a great time filler and a lot of fun to go from cover to cover in a cookbook.
I'd like to have a big one, about 500 or so recipes so that I don't run out. I would just do the Julia Child one but the woman lived for butter and...well obviously I just can't eat all that butter and show my face around here LOL
Also my hubby is a super picky eater and I'm not too far behind him, so I'm not interested in one that has a lot of crazy recipes...and by crazy I mean exotic fruits/veggies or really any meat other than beef, pork, chicken, turkey, and basic fishes LOL
Anyone have any suggestions?

    Weight watcher ones are good and tasty and have normal food look on amazon :-)

    why not try some of the recipe websites? there's a free treasure trove online of yummy dishes to try! you can always adapt the recipes to make them healthier
  • i saw a really good one at wh smith this week its called the healthy cook book and is half price for under 7 pounds some really nice looking recipes in i am investing in it myself next pay day:)x

    I really LOVE my weight watchers cookbook. It's freaking amazing. It's like the gigantic good houskeeping book, but all healthy stuff with nutrition facts. Not many processed ingredients in there either - which is a reason I don't care for Hungry Girl.

    This is the one I have:

    It has soups, salads, desserts, sauces, breads, ect ect ect ect

    It's like 300-400 pages....500+ recipes. Definitely fits the criteria.

    It only has 325 recipes but I highly recommend The Looneyspoons Collection by Janet and Greta Podleski. I have three of their cookbooks and I make their food constantly!!
