Mix together: 2 1/4 cups oats, 1/2 cup oat flour (or make your own our of oatmeal in your coffee grinder!), 2 TBS peanut butter, 1/4 cup light maple syrup, 5 TBS apple butter, 1 egg, 1/4 tsp vanilla, 1/4 tsp baking soda.
Bake in greased 8x8 pan for 20 minutes or until golden brown. Let cool 10 minutes & cut in to 9 bars. Right about 180 cals each. Pair with a piece of fruit for a quick and tasty on the go breakfast.
Note: these would probably be tasy with nuts, dried fruits, or whatever your liking!
