Low Fat/Low Cal Shrimp Creole

Made this tonight and served over mock cauliflower rice (posted recipe in the forum) - it's so good, it feels like it shouldn't be so good for you!

Shrimp Creole:

1 bag of (12oz) of 30/40 shrimp - 400 calories for entire bag. I use cooked shrimp and just defrost in some cold water prior to making the dish, you can use raw if you want to take a few extra minutes to cook them. Make sure these are de-veined and tail-off
1 can Great Value (Walmart brand) Tex-Mex Style Fire Roasted Tomatoes - 140 calories for the entire can. These aren't the plain tomatoes - they are spiced, so look for "tex mex" on the can.
1 cup red onion, finely chopped - 70 calories
1 cup celery, finely chopped - 15 calories
1 cup bell pepper, finely chopped - 40 calories

What to do:

Combine the pepper, onion and celery in a skillet that has been sprayed with nonstick spray. Cook until soft.
Half the can of tomatoes, do not drain. Blend 1/2 of the can in the blender until smooth. Place other 1/2 of can in the skillet and warm with the veggies. Add in the blended tomato. Simmer until the sauce gets hot, then add shrimp. The tomatoes are usually spiced enough that I don't add extra hot sauce to this, but you can if you want.

Makes 4 good sized servings.

Per serving: about 167 calories

With 2 cups of mock cauliflower "rice" under each serving - about 217 calories per serving. This goes great with a plain, lightly dressed salad on the side!
