whole chickens

im living on my own now and yesterday I cooked (my first may I add) a whole chicken with all of the skin removed and a little butter and a lime squeezed on it. I knew I would be eating it for many meals but I dont know what to do with it any suggestions are appreciated

  • You can make homemade soup or stew or chicken salad....or chicken chilli...

  • I agree with the chicken salad suggestion. I was amazed at how deliciously low fat, low cal chicken salad could be prepared.

    You can make enchiladas with low carb tortillas and light cheese. I use almost no cheese because I have real g.i. issues with dairy. I make my own enchilada sauce and it's a great meal. http://allrecipes.com/recipe/red-enchilada-sauce/detail.aspx

    Cut it into chunks and make a big salad. Add in a bit of feta and dress with just balsamic vinegar and you have a filling, healthy and yummy meal.

    you can always freeze the chicken so you aren't getting tired of it but i usually make chicken jerky out of leftovers, its healthy and when you make it yourself the perservitaves dont go in it

    I like to shred the leftovers and use them for chicken burritos with some corn, beans, salsa, and a sprinkle of cheese. Or a soup with tons of veggies. You can do a spinach wrap with some avocado and veggies. Shredded chicken chili with some chunky tomato, beans, and sauce served over brown rice.
