    Unfortunately brisket is a naturally fattier cut of meat, so I can't see much in the way if lightening corned beef and cabbage. I've been trying to figure out a way to do this too. Will probably make this my treat meal for the week of St Patrick's Day.

    I cook the corned beef in a crockpot all day. Then when I get home from work I let it cool down & skim/trim off the fat. Most of it can be removed this way, but the sodium is still an issue.
    Cabbage &/or potatoes can be boiled in a different pot of water.
