Hot Spinach Artichoke Dip

Ingredients:
1 small onion, finely chopped
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 package (8 ounces) fat-free cream cheese, cubed
1 cup (8 ounces) reduced-fat sour cream
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
3/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 to 1/4 teaspoon crushed red pepper flakes
1/4 cup shredded reduced-fat cheddar cheese
Assorted reduced-fat melba toast or pita chips

Directions:
In a large nonstick skillet coated with cooking spray, cook and stir onion until tender. Add spinach; cook and stir over medium heat until heated through. Reduce heat to low; stir in cream cheese and sour cream. Add artichoke hearts, Parmesan cheese, salt, pepper and red pepper flakes; cook for 1-2 minutes or until heated through.

Transfer to an ungreased 1-1/2-qt. microwave-safe dish; sprinkle with cheddar cheese. Cover and microwave on high for 2-3 minutes or until cheese is melted. Serve warm with melba toast or pita chips.

Yield: 18 servings.

    Creamy Artichoke Dip

    Ingredients:
    2 cans (14 ounces each) water-packed artichoke hearts, rinsed, drained and coarsely chopped
    2 cups (8 ounces) shredded part-skim mozzarella cheese
    1 package (8 ounces) cream cheese, cubed
    1 cup shredded Parmesan cheese
    1/2 cup mayonnaise
    1/2 cup shredded Swiss cheese
    2 tablespoons lemon juice
    2 tablespoons plain yogurt
    1 tablespoon seasoned salt
    1 tablespoon chopped seeded jalapeno pepper
    1 teaspoon garlic powder
    Tortilla chips

    Directions:
    In a 3-qt. slow cooker, combine the first 11 ingredients. Cover and cook on low for 1 hour or until heated through. Serve with tortilla chips.

    Yield: 5 cups. (serves 20)

    Thanks ChubbyBunny!! I love Spinach Artichoke Dip but know that the one in the restaurants is so bad (but so good). I can't wait to try this out. :happy:

    I make a similar dip - absolutely foolproof but not low calorie!
    1 cup sour cream
    1 cup mayo
    1 cup cream cheese
    1 can artichokes in water - drained
    1 cup grated cheddar
    1/2 cup Parmesan
    Mix all together. Bake in a pie pan at 350 till bubbly & golden.

    If you are short on one or more ingredient, it's very forgiving!
