Thoughts on dieting and society mentality

Calorie counting has its place and yes it was useful in the beginning to give me a sense of how much food was 1200 cals, although it didn't really work whilst I was still eating wheat daily.
but now seeing lots of posts where people are saying they were over on there protein, under on their carbs, or.. 'I've got 30g fat left what should I do? '
Is there anyone else just eating healthy foods,.. the old fashioned type that come out of ground or fresh from butchers rather than from packets/factories, cans of protein shakes?
I seem to be managing to burn off everything I eat now I've cut out the wheat.. maybe I just have had a wheat intolerance and never knew, but do we really need to measure every single gram of protein, fat, carbs in every single thing we eat?
I was watching a program on diets of the world recently.. The UK used to be a meat and 2 veg with potatoes until microwaves, takeaways and ready meals became available everywhere, we cooked with lard, which incidentally contains less fat than butter and olive oil! .. and didn't know calories existed, yet there was no where near as many overweight people as there is now.... why? cos people worked all day instead of sat in front of telly.
In china they eat rice for breakfast.. here white rice is a bad food, carbs make you fat... I've never seen a fat person who lived in china!.. though seen a few who run chinese takeaways over here, which again contain deep fried foods and what we eat in chinese takeaway is nothing like what they actually eat in china! .. same goes for India... chicken korma and tikka don't exist over there, they were created for the british palette!
All the proper diets (that they actually eat in the real country) consist of vegetables, meats, fish etc that aren't processed beyond recognition and a ton of chemicals, added to it... and people moved.. not just once a week dragging their butt to exercise class or gym, but everyday for most of the day. They also tended to just eat breakfast, lunch and dinner rather than this 6-8 snacks/small meals a day.
I just don't think measuring every single gram and knowing whether you had 100g of protein today or 130g really matters as long as you burned it off?
Sometimes I think the problem is with the today's way of thinking is people want the most they can get for the least amount of work on their part, whether that's dieting, working (I've had helper who wanted me to pay her daughter to clean my flat cos she just wanted to take me out for shopping trips and not do any cleaning- and still get paid! ) or whatever... the same seems to apply to dieting for many people.. how can I lose the weight the quickest with the least amount of effort? .. several posts come on with similar headings to losing by dieting only, no exercise, do i have to exercise?.. is exercise necessary?
Is this the reason why people are measuring every gram? has someone shown that if you get the numbers exactly right you can lose weight with no effort and no exercise?
Sorry if this sounds like a rant... I get frustrated by the amount of people on here with perfectly normal working bodies who don't want to exercise cos its too much effort when I've spent the last 8 years wishing I could still run over the fields with my dog instead of my first thought been is it accessible? will i get wheels stuck in mud? what if no-one is passing by to help me get back out? will I still be able to dress & feed myself 5 years from now if I do physio every day?
You only get one body... use it.. while it still works!!!
