Days of rest?

Okay, so I know that the body needs rest from exercise, but my question is how. Is it better to completely take a day off and not do any exercise (other than what you normally do day to day)? Or would it be better to still hit the gym but severely tone it down? I've tried both but haven't really seen a difference one way or the other. Maybe if there's anybody who has had more experience with this or knows what's best for the body? I'm trying to find a great middle ground because I'm all over the place. Thanks in advance!
