Beef and Apple Curry
1 pound lean stew meat, cut into bite size pieces
1 tablespoon curry powder
1 small yellow onion, diced
1 clove garlic, minced
1/2 teaspoon black pepper
2 Granny Smith apples, peeled, cored and cut into 1/2” cubes
1/2 cup beef broth, low sodium
1/3 cup apple juice, unsweetened

Place stew meat in crock pot, sprinkle with curry powder, add all other ingredients and stir to combine. Cover, cook on low 7 to 8 hours. Beef and Apple Curry is delicious served over a bed of brown rice.
