Does anyone cook with amaranth?

Hi - I've been going through my cupboards, clearing out the random bags of grains and found some amaranth. I cooked some up then made it into a blueberry omelette for breakfast. It was good and I'll use it again as apparently it's a good source of protein. I was wondering how other people use it in their cooking as I've got a whole bag getting close to its use-by date! Let me know if you have any suggestions - thanks in advance!

    I've got some I've been trying to use too. I tried cooking it for the family and serve like rice and no one wanted to eat it. It's suppose to be so good for you. You can pop it like popcorn in a pan. I tried this the other day and loved it and my 5 yr old keeps asking for it. I also want to try these Amaranth Clusters that I found on the web
    Ingredients

    1 1/2 cups rolled oats
    1/2 cup amaranth
    1/2 cup macadamia nuts, toasted and chopped
    1/2 cup dried cherries, chopped
    1/2 cup dried apricots, chopped
    1/4 cup honey
    2 large eggs (whites only)
    Kosher salt


    Directions

    1.Combine oats, amaranth,
    macadamia nuts, dried fruit,
    and honey in a medium bowl.
    Whisk egg whites with 1/4 teaspoon
    salt until foamy. Pour over
    dried fruit and stir to combine.

    2.Preheat oven to 350 degrees. Line
    a baking sheet with parchment.
    Scoop 3 tablespoons mixture
    (using an ice cream scoop)
    and pat into a 3-inch round
    on baking sheet. Bake, rotating
    tray, until clusters are
    golden brown, 15 to 18 minutes.
    Let cool completely.
    Store in an airtight container
    for up to 1 week.

    All I've done with it so far is used it to make chapatis. I just substituted the ground amaranth for the whole wheat flour.

    You mix 1.5 cups with 1/2 t salt and 3/4 cup water. Knead it all together and then roll it into 10 to 12 balls. Roll each ball flat with a rolling pin and then fry them on a hot skillet. You can mix a little oil in the dough if you want, or grease the pan, but you probably won't need to. These are great with hummus or tabouleh, or you can use them like a tortilla.
  • Thanks for the suggestions, the chappatis and clusters sound great! Since I posted the topic, I've been cooking it up mainly in omelettes. The best so far was with onion,garlic, medium curry powder, cooked chopped cauliflower, egg, about 50g cooked amaranth then feta on top - grilled. Think I'm going to get some parsley and try a tabbouleh this weekend but will keep experimenting as it's a far less bloating carb than rice etc etc. I'll let you know if I come up with anything good!

    Anyone else use this grain? I have tried it like oatmeal with molasses and fresh berries. Pretty good.
