Most times, baked sprinkled with splenda
On thanksgiving, it's my wife's sweet potato casserole0 -
"Bake" them in the microwave. Wash them, poke a few holes in the tater, put it in a paper bag (I use the lunch bag size) and throw it in the microwave for about 7 - 8 minutes. Test the tater for softness and bake additional minute as needed. Tastes just like an oven baked sweet potato in a fraction of the time.. Put your favorite topping - honey and butter substitute is a winner!

La Comedia's Famous Sweet Potato Soufflé Recipe
4 cups mashed sweet potatoes
1 cup sugar
2 eggs
1/2 cup milk
1/2 tsp. salt
1/3 stick butter or margarine (melted)
1 tsp. vanilla
Mix well
Pour into buttered pan
Topping:
1 cup brown sugar
1/2 cup flour
1/3 cup butter or margarine (melted)
1 cup pecans
Crumble topping evenly over potato mixture. Bake at 350° for 35-45 minutes uncovered.0 -

Black Bean and Sweet potato burritos:
Peel and cube and boil for 10 mins: 2 medium sweet potatoes
Meanwhile, heat: 1 Tablespoon veggie oil
Add: 1 small onion, chopped (cook til soft)
Add: 3 cloves garlic, minced
1 green chili, chopped (cook til well incorporated)
Add: boiled sweet potato
1 can black beans (drained)
handful of cilantro
pinch of cayenne
1/2 lemon, juiced
1/2 teaspoon salt
Mix everything together and pour all ingredients into food processor or blender. Blend 20-30 seconds until smooth-ish. Preheat oven to 350 degrees and spray a baking dish with cooking spray. Spoon potato mixture into whole wheat flour tortillas (or your favorite tortilla). Roll into cigar shape. Place burritos in snug fitting baking dish and cover with foil. Bake for 30 mins. Sprinkle with cheese and salsa(optional).0
