Stuffed apple chicken pita sandwich

This recipe is SO good! My kids love it, too! A half a pita is a full serving. :smile:

6 oz. - cooked cubed boneless skinless chicken breast
1 - apple cored and cubed
3/4 cup - raisins (not packed)
3/4 cup - walnuts, shelled and chopped
3 Tbsp - Light Mayo (I use Kraft)
1/2 - 100% whole wheat pita pocket

Mix chicken, apple, raisins and walnuts until well-combined. Add mayo and stir. Refrigerate appx 1 hour. Fill 1/2 pita pocket with appx 3 Tbsp of mixture.

    That sounds sooo good.. I really need to make a shopping list.. I forgot Pita bread and apples at the market last night.. Otherwise I'd have all the stuff to make it..

    I use any kind of apples. Today I used Empire's, but it doesn't matter what kind. Just any old medium-sized apple will do. :)

    green apples like granny smith (imo) go with chicken best. or fuji. but not yucky red (non)delicious apples. (why do they call them red delicious? that is an awful, dirty lie!!!) (again, imo)

    I love apples in chicken salad, try adding some grapes too it too! soo yummy!! ( it may sound gross but its really not!)

    Gala Gala Gala! Yummmm. Love crisp apples.

    Thanks for this I make a similar chicken salad type deal but my bf and I hate mayo so I use sour cream & sometimes a little cream cheese and it works beautifully. A craisen/pecan combo is delicious in it as well.
    See, I never think about making stuff like this and stuffing it into 1/2 a pita -- that sounds like an awesome thing to do. Thanks!!

    Ooohh this sounds good! I will have to try this! I do something similar with tuna, don't really know why I never thought to make it with chicken! LOL

    I was going to make this for lunch tomorrow. If you make it a day ahead of time do the apples get brown? Should I wait and make it tomorrow?

    Sprinkle some lemon juice on the apples and they won't brown. You can also use diet sprite. It has enough citrus in it to keep the apples from browning.
