Indian Spiced Basa with Mock Rice Pilaf and Cold Cucumber Sa

Big post, bear with me! Also, it's Cucumber SALAD, not "Sa" as the title suggests :tongue: (anyone know how to edit titles?)

Indian Spiced Basa:

You need: 8oz fillets of boneless, skinless Basa, one each per person you are serving. (140 calories each)

1 box Shan Aaloo Bhaji Curry Mix. (8 calories for 2 tsp of dry mix)

This is intended to season potato curry, but I love this mix (and all of the Shan's spice blends) so much that I use them often for other foods. They are very inexpensive as well, usually .99 cents to $1.49 for a generous package.

Defrost the fish, rinse and pat dry. Coat lightly with the spice mix. I grill these on my Foreman Grill, but you can bake or use a skillet with nonstick spray as well.

Mock Rice Pilaf:

4 cups of "mock rice" made from cauliflower, cooked and ready. (100 calories total)

1/2 cup carrot, cubed very small (26 calories total)

1/2 cup frozen peas (67 calories total)

1 low-sodium bouillon cube (15 calories)

Heat 1/2 up water in a skillet and add the bouillon cube, crumbled. Let it simmer until dissolved. Ad the mock rice, peas and carrots and heat through.

Entire recipe - 208 calories (52 cals per approx. cup - 1/4 recipe is slightly more than a cup!)


Cold Cucumber Salad:

1 cucumber, shredded into ribbons (I use a cheese grater) - 45 calories total
1 bunch radishes, shredded (on grater!) I used about 5 large radishes at 1 calorie each - 5 calories total
1/2 cup green onion, chopped - 16 calories
4 tbsp rice vinegar - 0 cals
1 - 2packets of splenda, depending on your taste
a few shakes of salt/pepper

Mix all of the above! Entire salad is 67 calories. Divide into 1/4's

Each plate - 1/4th of recipe mock pilaf, 1 -10oz fish fillet, 1/4 of salad - total of 211 calories per plate!

    Also, I usually buy my spices at a local international market, saves shipping, but they are worth it even if you have to order online!
