Exercises for specific areas

I lost 27 lbs so far and I'm at 191 lbs now. My goal weight is approx 140 - 145. I have been doing cardio and pilates for the last 6 weeks. I just purchased a Total Gym. Love it but I'm not exactly sure how to calculate my calories burned. I read the Live strong article and with my weight and moderate to vigorous pace, I'm burning about 200 calories for 30 minutes, according to their estimates. Does that sound about right to you?
My other two questions are.... It seems like I'm losing weight everywhere except my neck and my back, especially just where your bra band would go. What are good exercises for your neck? Especially to get rid of a double chin? Then also the back area?
