Crunchy salmon salad

3 oz chopped carrots
4 oz chopped cucumber
2 oz chopped bell pepper
2 oz chopped celery
2 oz chopped mushrooms
1/8 cup slivered almonds
1 hard boiled egg (use egg-slicer and slice both ways)
1 can or pouch of Chicken of the Sea pink salmon
2 T Miracle Whip Light
1 Sara Lee pita bread

Mix chopped vegetables, almonds, egg, salmon and Miracle Whip in a bowl. Serve in the Sara Lee pita pockets. There will be a TON of leftover salad. If you want a super lo-cal lunch, just have the "sandwich," and save the rest of the salad for another meal. If you're starving to death, keep eating the rest of the salad by itself. It's tasty, filling and best of all, time-consuming. You feel like you're eating a TON, but you're not getting a ton of calories. Nice balance of protein and carbs, too.

If you're not into salmon, substitute 3 oz of chicken breast. If you can afford a few more calories in your budget, substitute cashews for the almonds and call it "crunchy cashew chicken salad."
