Spicy Tilapia & Pineapple Salad

I had this for dinner tonight. It was a very satisfying meal and low carb/low calorie/low fat. I hope you all enjoy, I was experimenting a bit with these flavors. :bigsmile:
Spicy Tilapia & Pineapple Salad
Serves 2
Ingredients:
6 whole leaves of romaine lettuce from the heart
2 fillets of tilapia (4oz), steamed plain
4 tbsp of your favorite fresh tomato-based salsa
½ cup chunk pineapple, drained
¼ cup green pepper, finely diced
1 small habanera pepper, minced
2 tbsp finely chopped cilantro
3 stalks of green onions, finely chopped
¼ tbsp olive oil
1 tsp salt-free Cajun seasoning (usually a mix of cayenne pepper, black pepper, paprika)
Cook:
- In a small skillet, heat the olive oil over-medium high heat. Add the pineapple, green peppers, ½ of the green onions, and the habanera pepper. Cook over high heat until the green peppers are soft and the pineapple begins to slightly brown.
- Remove the pineapple mixture from heat and mix in the cilantro. Set aside.
Assemble the salad:
On each plate arrange 3 of the romaine leave to act as a bed for the steamed tilapia. Add the tilapia and sprinkle each salad with ½ a tsp of the Cajun seasoning. Add 2 tbsp of the fresh tomato salsa to each salad, on top of the fish fillet. Split the pineapple mixture in two, and top each salad with it. You should now have two lovely salads. Garnish each with the leftover greens onions and a couple fresh sprigs of cilantro.
I even shredded a carrot and added that as a garnish; really gave the salad a pretty mix of colors.

Add some plantain chips with old bay seaoning on the side to recreate a McCormick and Schmicks salad!0
