Pork Verde Casserole-205 cals per serving!

In a large skillet sprayed with cooking spray, saute:
1 pork sirloin tip roast (about 1 1/2 lbs.), cut into cubes
2 cloves garlic, minced
1 onion, chopped
1 large red sweet pepper (sometimes I just cut up mini-peppers here)
1 T. each chili powder, cumin, coriander
dash of cayenne pepper, salt, and black pepper
Set aside meat and work on sauce:
1 cup nonfat greek yogurt
1 cup salsa verde
2 T. whole wheat flour
1 cup chicken stock
Blend together in blender. set aside. Cut 14 corn tortillas in half.
Pour a small amount of sauce in a 9 x 13 pan, then place 6 tortilla halves on top. Top tortillas with 1/2 pork mixture and 1/3 of sauce mixture. Repeat these layers, then top with 1 1/2 cups shredded mexican blend cheese. Makes 12 servings
