Idea needed for healthy coffee time treat

I need to bake something for coffee time for next friday, as it's last day at my current work, and close to my birthday. Traditionally, people bring in cakes and biscuits, but not only am I avoiding too many sweet things, but my whole work are post-christmas cake'd out!

Any suggestions? and I dont mean carrot cake, or something, maybe a healthy fruit tart? It might need to serve as many as 15 people.

    considering these, but really, I'm hoping to avoid cake/biscuit type foods altogether and go for something fresh and different (but still transportable on the bus!)

    I've got some low-fat orange oat biscuits that are really yummy and tried and tested:

    175g clear honey
    120ml orange juice
    90g rolled oats
    115g plain flour
    115g golden caster sugar (or you could use a sugar substitute to reduce the calories)
    grated rind of 1 orange
    1 tsp bicarbonate of soda

    Preheat oven to 180 degrees celcius
    line 2 baking sheets with greaseproof paper
    put honey and OJ in a small pan and simmer over a low heat for 8-10 mins, stirring ocassionally until it thickens slightly
    Put oats, flour, sugar and orange rind in a bowl
    Mix bicarbonate of soda with 1tbsp of boiling water and add to the flour mix, together with the honey and orange syrup. Mix well with wooden spoon
    drop spoonfuls onto the baking sheets, spaced apart as they will spread quite a bit, bake for 10-12 mins or until golden brown.
    Leave to cool on the trays for 5 mins before transferring to a cooling rack to cool completely.

  • You could do a really nice fruit platter with some chocolate ganache dipping sauces. Just make a runny ganache (melted chocolate and warm cream. Mix until smooth. Let cool) You could do a milk, white and/or dark chocolate sauces. That way you can just eat fruit and limit the sugar. You may be suprised how many people compliment you for choosing a healthy option! If you want to do a fruit tart you could just use a low fat custard as the filling, just a bit and then pile on the fruits. Good luck and enjoy!

    Everyone is moaning about how much chocolate and cake is still floating around, and rushing for the fruit, so that might go down pretty well!

    Bit worried about transporting a fruit tart.

    they sound good too!

    Maybe I could do both. Not sure I can afford enough "fancy" fruit for everyone.
