Pork Chops with Apples & Cranberries
Options
Another quick and easy meal.
2 tablespoons butter
1 large onion , halved, sliced
1 tablespoon vegetable oil
4 -6 boneless pork chops , about 3/4-inch thickness
salt
pepper
1/4 cup flour
2 cups coarsely chopped apples
1 tablespoon lemon juice
1/2 cup apple cider or 1/2 cup apple juice
3 tablespoons brown sugar
1/4 teaspoon cinnamon
1 dash ground allspice
1/3 cup dried cranberries ( I tend to use more than this)
1 In a large skillet, heat butter over medium heat.
2 Add onions and sauté for 4 to 6 minutes, until lightly browned.
3 Remove onions to a plate and set aside.
4 Add vegetable oil to the skillet.
5 Sprinkle pork chops with salt and pepper then dredge in flour.
6 Brown the pork chops for about 2 minutes on each side.
7 Return the onions to the skillet making a layer over the chops.
8 Meanwhile, combine chopped apples with lemon juice, apple cider, brown sugar, and cinnamon.
9 Pour the apple mixture over the pork chops and onions and bring to a simmer.
10 Reduce heat to medium-low and simmer, uncovered, for 5 minutes.
11 Cover and simmer for 20 minutes.
12 Stir in cranberries and continue cooking for 2 minutes longer
