Lentil Brown Rice Casserole

This isn't the prettiest of things, but it is so thrifty. I also find it works as comfort food.
3 cups broth, chicken or vegetable (I use low-sodium)
3/4 cup brown lentils
1/2 cup brown rice
chopped onion (about one half of a large one)
garlic powder and Italian seasoning blend to taste (I sometimes just chop a clove of garlic if I have it)
slices of carrots and mushrooms (optional)
This can be prepared in the oven or on the stovetop.
In the oven: mix together all ingredients in an 11x7 baking dish (or a large round casserole dish)
bake for 1 hour 10 minutes
On the stove: mix together all ingredients in a large dutch oven. Bring to a boil, then reduce heat and cook for about an hour.
Serve with grated cheese of your choice.

My family loves this recipe! We have been using it for years! (from Sue Gregg)
I usually eat it with some ff sour cream, salsa, low fat cheese and romaine while my husband and children make theirs on tortillas like a burrito. So nutritious and filling! :drinker:
