Does anyone have any good vegan recipes? (Or vegetarian without cheese) I need something new!

    I just made this recipe the other day, and it was fantastic.

    I didn't use the yogurt because I didn't have it. I ate it with brown rice.

    Made this 2 nights ago!

    In a slowcooker or pot:

    -1/3c red lentils
    -1/4c barley
    -1 package of thawed (from frozen) spinach
    -2c crushed tomato
    -3c cubed sweet potato
    -1c chopped bell pepper
    -3 cloves garlic
    -chopped/grated ginger
    -lots of curry powder (or whatever spices you like)
    -(cumin/garam masala/chili powder <-- optional, but I added these and results were AWESOME)
    -crushed chilis or hot sauce
    **any other chopped veggies you want, really...

    Cover with several cups of water (you may need to add more as it cooks or change the consistency to how thin/thick you want it).

    This needs to simmer or boil until the lentils go mushy and the barley is done. At least an hour or so (a pot is quicker than the slow cooker).

    If you let it sit in the fridge it sucks up the liquid and turns into a nice thick stew.

    Depending on how much water you add, mine worked out to just under 100cal/cup! :D Enjoy!
