Chicken Florentine for 2!!!

Chicken Florentine

1 pound chicken breast tenders (about 6)

1 cup thin sliced onions

1 8oz package white button mushroom, sliced

1 6oz package of raw baby spinach

1/2 of a fresh lemon

1/2 cup fine shredded Swiss cheese

Molly McButter

1 TBS real butter

assorted spices

Take the tenders and lightly season with a little garlic powder, onion powder, black pepper, turn over sprinkle the chicken seasoning on of your choice, I use McCormick Rotisserie Chicken seasoning. Melt butter in a large skillet brown tenders till golden and cooked through. Place 3 tenders on two oven safe plates in the oven on warm. In the same skillet now add the onions and mushrooms and saute until done, add the entire bag of spinach it will wilt down may take a little bit to get it all in there, squeeze the lemon over the top of it all. If it is too dry add a splash of water stir fry it till all the liquid has evaporated, turn off the heat. Split and place the spinach mix over the chicken. Sprinkle the Molly McButter over the veggies, sprinkle the cheese over the top. Place back in the oven till the cheese melts. Enjoy!

This is about 400 calories a serving if I calculated it correctly. It is so good! I love the Ihop Chicken Florentine Crepes with hollandaise sauce but it is so fattening so I took the ingredients that are used for it and created this, by using the lemon & Molly McButter you get the taste of the sauce with out the calories! I don't use the crepes either so I cut those calories too! I think this would pair good with rice or something. I like it just the way it is!
