I was always afraid to try salmon because I thought it would be too fishy. Tonight, I drizzled some olive oil on a sheet of foil, placed the salmon on it, covered it w/a teaspoon of pest and sliced tomatoes. I closed the foil and cooked at 450 for 15 minutes. I munched on red peppers and hummus while it baked (and a glass of wine:drinker:) It was so delicious and healthy!

    Sounds great!:flowerforyou: Although I like fish, salmon is not my favorite- too fishy. I bet the pesto masks the flavor! Thanks.:smile:
  • aprilvet- I noticed your ticker and we have the same goal. It is really hard to get rid of the last few pounds! That's why I'm trying to make new things...I want to think of it as having fun with 'healthy eating' instead of 'dieting' kwim?

    Have you tried halibut? Yummy and easy to cook in a foil packet. I found it is cheapest at Costco (in the freezer section)
  • I will have to give it a try and google some easy recipes. I like mahi mahi too.

    Mmmmm... I live in Alaska, and we get to have Halibut all the time!!! We're so spoiled...:blushing:
