Chicken Florentine Soup - healthified

I don't know about you - but I've been haunted by those Olive Garden commercials lately with the new Chicken Florentine soup they have, and it looks so yummy that I want it! But I know if I go there, it'll be loaded with oils and salt and russet potatoes, and I'll have to have bread and salad with it; so I figured that I could do better in a quick and easy way. So I threw this together yesterday and it was so good, I had to share:

Pacific Foods Organic Creamy Tomato Soup (had this in my pantry so it cut out having to do onions, celery, carrots) - full container - 4 cups
Trader Joe's organic vegetable low sodium broth - 2 cups
Muir Glen roasted diced tomatoes - 1 can with juice
Skinless chicken breast - about 4 ounces
Red potatoes - 2 diced
Sea salt
Pepper
smoked hot paprika
garlic
cayenne pepper

Simmer together until potatoes are soft, about an hour, continue to season to taste

Clean and shred some spinach leaves into the bottom of a bowl, ladle hot yummy deliciousness soup over the spinach and top with some shredded Parmesan or romano cheese and enjoy!

Each serving is about 1.5 cups and less than 200 calories with 3 grams of fat.

Edited to add fat grams from recipe calculations...how could I forget that part?
