I usually use 96/4 lean ground beef. In a bowl, mix meat, chopped onion, chopped bell pepper, garlic salt, salt, pepper, lemon pepper (or whatever spices you like). Mix well.

    Heat oven to 350 degrees.

Spray broiler pan (usually one that sits up high on top of another pan and has holes where the grease can drain into bottom pan). Bake for about 20-30 minutes or until cooked through. Then add to sauce and serve. Really good and not very fattening.

I'm sure Memaw's homemade recipe is better - sure sounds yummy - but if you're pressed for time try Foster Farms lean turkey meatballs. I just tried them for the first time a couple weeks ago and I was so surprised how good they are! 160 cals for a serving of 3 meatballs (which are huge), 5 g carbs, 8 g fat, 16 g protein.

    Italian Meatballs
2 pounds ground beef ( use a lean ground beef. Or you can use a mix of pork and beef)
    1 cup fresh bread crumbs
1/2 cup finely grated Asiago cheese (can also use Romano or Parmesan)
    1 heaping tablespoon parsley
    1 teaspoon kosher salt
    1/2 teaspoon black pepper
    2 cloves garlic, minced
    2 eggs

In a large bowl, mix all ingredients by hand, using a light touch. Take a portion of meat in hand, and roll between palms to form a ball that is firmly packed but not compressed. Repeat, making each meatball about 2 inches in diameter.

You can either fry these and add to sauce or Bake at 350F for about 30 min.

They taste great right out of the oven. We had them for sandwiches tonight for dinner. The rest went into sauce for Wednesdays dinner.
