Apple Nut Carrot Muffins
Makes 18 muffins.
2 cups flour
1 cup sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup oil
2 cups shredded carrots
1 large apple , shredded
1/2 cup chopped walnuts
2 teaspoons vanilla
1/2 cup raisins
3 eggs
1 Mix dry ingredients together.
2 Then add remaining and mix.
3 Fill muffin tins 2/3 full.
4 Bake at 350 degrees for 20-25 minutes.
Serving Size: 1 (80 g)
