Question: How would you log this.

I do 10 minutes of kickboxing and 10 minutes of plyometrics which I believe is a form of aerobics. My question is should I log it as 20 minutes of aerobics or kickboxing or 10 minutes of each. Thanks for any suggestions.

For things that aren't straight forward (walking, running, jogging, elliptical, etc.) I just create my own exercise and call it whatever I want instead of using the database. The name of something is far less important than being accurate on the calories burned.
Speaking on which, beware of the MFP displayed calories burned. It can be WAY off. It will tell me I burned 400+ calories on the elliptical for 30 mins, but my HRM (which is way more accurate) will say 250.0 -
I would log them separately.0
